Our Story

Grilled. Layered.
Unapologetic.

Lavash is Armenian food, exactly as it should be. No fusion, no shortcuts, no apologies.

Who We Are

We grew up in kitchens where food meant eight-hour meals, where the aroma of charred meat and pomegranate molasses meant family, where spices had stories. Our grandmothers cooked from memory, not recipes. They built depth, not speed. They built soul.

For two decades, Armenian fast casual didn't exist in America. Not at scale. Zankou proved it could work. Luna Grill proved the quality model could survive fast casual. But the category stayed fragmented, regional, quiet.

It's time to change that.

Why Armenian Food

Armenian cuisine is one of the oldest in the world. It survived empires, diaspora, and every force that tried to erase it. The food itself—pomegranate molasses, charred garlic toum, sumac, Aleppo pepper, roasted bulgur—carries history. Every meal is a connection to something ancient and unbreakable.

But here's what nobody talks about: it's delicious. Bold. Layered. The kind of food that makes you understand why this culture cooked the same way for over a thousand years.

There are 400 Cava locations in America. Zero Armenian fast casual chains. That's not a market failure. That's an opportunity waiting.

Our Mission

Make Armenian food as beloved as any cuisine on the planet.

Not by watering it down. Not by calling it "Mediterranean" and leaving out the story. But by introducing millions of Americans to flavors they didn't know they'd been missing.

Every neighborhood deserves this food. Every table deserves the taste of Armenia.

Welcome to Lavash. Cooked the way your grandmother would. Served the way you actually eat.
